About this wine
Character
A dry white wine of cool style: clearly drawn, taut, with the substance that old vines bring. The magnum format slows development and gives the 2023 vintage time.
Terroir and origin
Domaine Rémi Jobard in Meursault farms nine hectares, with the Aligoté growing in the En Buzigny site. Since 1994 the estate has worked without artificial fertilisers or pesticides, and without herbicides since 1998. The rows are worked by hand and cover-cropped, no fertiliser is applied, and cordon pruning keeps yields low.
Grape variety and vinification
A single-varietal Aligoté. In the cellar, two very large presses process the grapes over many hours at the lowest possible pressure, so that only the finest must, free of bitter compounds, reaches the barrel. Ageing takes place in 600-litre barrels made by the Austrian master cooper Stockinger, from French, Austrian and Slavonian oak, for around fifteen months, followed by a resting period in tank. Only about a fifth of the barrels are renewed each year. "The wood should support the wine, not dominate it," says Rémi Jobard. The wine is bottled unfiltered; its stability comes from two winters of maturation.
On the palate
Dry and lean at 13.0 % vol., carried by precise acidity. Lemon zest and green apple persist to the end, with a long, saline finish.
Food pairings
A wine for the start of a menu: oysters and shellfish, river fish in beurre blanc, poultry terrine, gougères as an aperitif, or young hard cheese.
Special features
Old vines from En Buzigny, unfiltered bottling and the 1500 ml magnum format, in which the wine matures more slowly.
