About this wine
Character
An Aligoté built on transparency. At 12.0 % Vol. it stays lean and dry, its energy coming from acidity and salinity rather than volume.
Terroir and origin
The Domaine Rougeot Père & Fils is based in Meursault on the Côte de Beaune and farms 12.6 hectares. Grandfather Hubert, mayor of Meursault for 25 years, expanded the estate in the sixties. Pierre-Henri Rougeot works biodynamically, working the vineyard entirely by hand, with tractors used only minimally. His credo: «There can be no good wine from bad soil.»
Grape variety and vinification
Pure Aligoté. Fermentation is spontaneous, using the estate's own yeasts, in the 18th-century cellars once built for the Hospices de Beaune. No sulphur is added throughout the ageing process, not even at bottling, hence «Sans Sulfite Ajouté». There is no bâtonnage, and the wine is neither fined nor filtered. The reductive style stems from his formative years at Domaine de Montille.
On the palate
The entry is bone-dry and precise. Lemon zest and green apple carry the fruit, underscored by fresh herbs and a cool salinity that defines the long finish.
Food pairings
With oysters and seafood, with sashimi, as well as with Rocamadour or a leek and seafood quiche.
Special features
The diagonally striped labels identify the house's cuvées aged without sulphur. The trigger for the switch to organic farming was premox, the premature oxidation of the white wines in certain plots. In 2016, Pierre-Henri Rougeot ended his father Marc's supermarket business and repositioned the domaine towards quality wines.
