About this wine
Character
A Chardonnay built entirely around transparency: pure fruit, restrained oak, vibrant energy. Pierre-Henri Rougeot converted the estate in 2016, moving away from his father Marc's supermarket-supply business towards quality wines, and this Bourgogne Côte d'Or shows that new direction in its most purist form.
Terroir and origin
Domaine Rougeot Père & Fils is based in Meursault and farms 12.6 hectares across plots in Meursault, Volnay and Pommard, expanded by grandfather Hubert in the 1960s. The work is done biodynamically and by hand, with only minimal use of tractors. Rougeot's creed on the matter: "There can be no good wine from bad soil."
Grape variety and vinification
Pure Chardonnay. Fermentation happens spontaneously with the estate's own yeasts, ageing takes place in 228-litre Burgundy barrels with a low proportion of new oak, in 18th-century cellars originally built for the Hospices de Beaune. No bâtonnage, no fining, no filtration. Here, Sans Sulfite Ajouté means literally that: no added sulfur, not even at bottling. The diagonally striped labels identify this range.
On the palate
Dry and taut in structure, with green apple and lemon over a chalky minerality. The acidity carries far, the finish stays salty. 13.0% vol.
Food pairings
With pan-fried pike-perch, shellfish and poultry in cream sauce. A mild Comté also suits this structure.
Special features
The large 1500 ml format slows ageing and gives a wine made without added sulfur extra calm in the cellar.
