About this wine

Character

Sans Sulfite Ajouté literally means: without added sulfites. Pierre-Henri Rougeot forgoes this both in the cellar and at bottling for this cuvée, and this Chardonnay lives precisely off that. It shows an unprotected, direct fruit, plenty of drive and a saline length that carries the wine rather than polishing it.

Terroir and origin

The estate farms 12.6 hectares in Meursault, Volnay and Pommard, expanded in the 1960s by grandfather Hubert, who was mayor of Meursault for 25 years. The work is done biodynamically and exclusively by hand, with tractors used only minimally. Rougeot's credo on this: "There can be no good wine from bad soil."

Grape variety and vinification

100% Chardonnay, spontaneously fermented with indigenous yeasts in 18th-century cellars originally built for the Hospices de Beaune. Ageing takes place in 228-litre Burgundy barrels with a low proportion of new oak, without bâtonnage, without fining or filtration. Rougeot's apprenticeship at Domaine de Montille, where he learned reductive winemaking, remains formative. 13.0% vol., dry.

On the palate

Dense and focused, with lemon zest and crisp green apple over a linear acidity. Joined by chalk and a saline minerality that gives shape to the fine, silky texture and keeps the finish long and clear.

Food pairings

With pan-fried turbot in lemon butter, scallops or a creamy mushroom pie. Poultry in cream sauce and aged Comté also play well with the saline minerality.

Special features

In 2016, Pierre-Henri Rougeot ended his father Marc's supermarket business and shifted the estate towards quality wines. Recurring premox problems in individual parcels were decisive in choosing the organic path. Since then, the diagonally striped labels have identified the cuvées aged without added sulfites.
