About this wine
Character
A Pinot Noir to which sulfur has never been added: Sans Sulfite Ajouté means exactly that, from the start of fermentation right through to bottling. At 12.5% ABV, the wine remains lean and translucent, its energy coming from juiciness and freshness rather than extraction.
Terroir and origin
The grapes come from the "Les Vaux" vineyard within the Bourgogne Côte d'Or appellation. Pierre-Henri Rougeot farms 12.6 hectares around Meursault biodynamically, working by hand, with tractors used only minimally. His credo: "There can be no good wine from bad soil."
Grape variety and vinification
100% Pinot Noir. The grapes remain uncrushed, and whole-cluster fermentation begins spontaneously with the estate's own yeasts. Ageing takes place in 228-litre Burgundy barrels with a deliberately low proportion of new oak, in 18th-century cellars originally built for the Hospices de Beaune. The wine is neither fined nor filtered.
On the palate
Red forest berries and crisp cherry, followed by an earthy spiciness. Dry, juicy, with fine tension and a saline minerality that carries through the finish. The texture is silky, the tannin finely woven.
Food pairing
With roast quail and pheasant breast, with pink-roasted saddle of lamb or mild mushroom risotto. Lightly chilled, it also pairs with charcuterie and creamy soft cheeses such as brie.
Special features
In 2016, Pierre-Henri Rougeot ended his father Marc's supermarket-supply business and refocused the estate on quality wines. Since then, the diagonally striped labels have identified the cuvées made without added sulfur.
