About this wine
Character
A red Burgundy made from Pinot Noir and Gamay that carries no added sulfur, which is precisely where its agility comes from. At 12.0% ABV it stays lean, the fruit remains unvarnished, the texture translucent.
Terroir and origin
The grapes come from the "Les Vercherres" vineyard. Pierre-Henri Rougeot took over the family's 12.6 hectares in Meursault in 2016, ending his father Marc's supermarket-supply business in favor of quality wines. His statement "there can be no good wine from bad soil" describes the work in the vineyard: hand labor, minimal tractor use, biodynamic farming.
Grape variety and vinification
The Passetoutgrain blends Pinot Noir and Gamay. It is aged in 18th-century cellars originally built for the Hospices de Beaune. Rougeot ferments spontaneously with native yeasts, keeping his Pinot Noir grapes whole-cluster and unstemmed. He uses 228-liter Burgundy barrels sparingly, with a low proportion of new oak. No bâtonnage is carried out, nor filtration or fining. No sulfur is added at any stage of the aging.
On the palate
Juicy and direct, carried by redcurrant and sour cherry, with an herbal trace behind it. The tannin stays fine-grained, the acidity clear, the finish dry and cool.
Food pairings
With charcuterie and Charolais beef terrine, lightly chilled also with roast poultry or mushroom ragout.
Special features
The estate's diagonally striped labels mark the cuvées aged without sulfur. The estate has been organic-certified since 2020, with Demeter conversion under way since 2021.
