About this wine
Character
A frizzante made without an autoclave: fermentation finishes in the bottle, and the yeast stays in it. What remains is a juicy, dry sparkling wine with the slight haze that this old-style method brings with it.
Terroir and origin
Casa Coste Piane is located in Santo Stefano di Valdobbiadene, at the heart of the classic Prosecco zone. The six hectares of steep slopes lie between 250 and 400 metres above sea level, on lean, marly soil only a few centimetres deep, beneath which bare limestone lies. The vines average 80 years of age, with some reaching 120. The Brichet comes from sites outside the DOCG boundaries and therefore carries the Colli Trevigiani IGT designation.
Grape variety and vinification
Glera and Verdiso, harvested exclusively by hand. Only the juice from the first pressing is used, the tête de cuvée; the must ferments spontaneously with its own yeasts. In spring it is bottled before fermentation is complete, finishing it there, with no disgorgement, no dosage and no filtration. 11.0% ABV.
On the palate
The nose is intense and dense: linden blossom, lilac and a touch of elderflower up front, then lime zest, with contouring yeast notes underneath. On the palate, the fine bead of the natural fermentation carbon dioxide outlines the wine, the texture turns creamy, the fruit is extract-rich and juicy, and the ripe acid arc spans widely across the palate.
Food pairing recommendations
Antipasti, fried seafood and risotto ai frutti di mare, as well as fried courgette flowers or burrata with lemon.
Special features
Loris Follador farms the estate organically together with his wife Sandra and sons Raffaele and Adelchi: copper and sulphur against fungal diseases, grass and wildflowers growing between the vines. Propagation is done through massal selection from the estate's own vine material, with no clones used. The family has bottled its own wine since 1983, and the winery is a member of the Consorzio Vini Veri. Magnum, 1500 millilitres.
