About this wine
Character
A Frizzante made the traditional way: fermentation finishes in the bottle, the lees remain within, and the glass reveals a white-gold, lightly hazy sparkling wine at 11.0% ABV. Its freshness comes from the lees and herbal spice, not from residual sugar.
Terroir and origin
Casa Coste Piane is located in Santo Stefano di Valdobbiadene, at the heart of the classic Prosecco region. The six hectares are spread across steep slopes between 250 and 400 metres above sea level, where no machine can work anymore. The soils are lean: a few centimetres of marl over bare limestone. The vines were planted by Loris Follador's grandfather and father, with some individual vines reaching up to 120 years of age.
Grape variety and vinification
Glera, propagated exclusively from the estate's own vines via massal selection, without clones. The grapes are hand-harvested, and only the juice from the first pressing is used, the tête de cuvée. The must ferments spontaneously with its own yeasts. In spring, it is bottled before fermentation is complete, finishing it there. No disgorgement, no dosage, no filtration.
On the palate
Clear and pure, dry and without cloying sweetness. Apple, pear and quince compote meet linden blossom and lemon balm, underpinned by a yeasty structure reminiscent of brioche with butter and honey. A wine for the first days of spring and for hot summer afternoons.
Food pairings
Pairs well with Prosciutto Veneto Berico-Euganeo, fried sardines, seafood risotto and Venetian cicchetti.
Special features
Loris Follador runs the estate organically together with his wife Sandra and their sons Raffaele and Adelchi: copper and sulphur against fungal disease, grass and wildflowers between the rows, chickens and ducks among the vines. The family has bottled the wine themselves since 1983. As a member of the Consorzio Vini Veri, the estate forgoes any artificial stabilisation.
