About this wine

Character

A firm, structured Brunello di Montalcino from a single vineyard. The nose is approachable from the outset and gains noticeably with air: juicy red and black cherries, dark raspberries and a touch of wild strawberries, underscored by cinnamon, earth and charcoal, topped by a cool note of mint, sage and rose petals.

Terroir and origin

The fruit comes from the 1.2-hectare Vigna della Piaggione at 420 to 450 metres above sea level, east-southeast facing, on skeleton-rich limestone soils. Podere Salicutti farms 4.5 hectares in total on marl rock that is 60 to 80 million years old, around 35 kilometres from the Tyrrhenian Sea.

Grape variety and vinification

Pure Sangiovese, hand-selected, spontaneously fermented at up to 28 °C and then gently pressed. Ageing took three years in casks of ten, 20 and 40 hectolitres. The wine was bottled unfiltered, followed by twelve months of bottle ageing. Gianni Fabbri oversees the cellar. 14.5% vol., dry.

On the palate

Ripe, crisp fruit of cherry and raspberry, joined by star anise, cinnamon, Sichuan pepper and grilled herbs. The tannin is fine-grained yet silky and polished, with a lively acidity running through the entire wine. The sweet extract lends richness without softening the wine's contour.

Food pairing suggestions

Sichuan-style beef strips with green beans, risotto with chicken liver and sage, or mapo tofu.

Special features

In 1996 Salicutti became the first estate in Montalcino to receive organic certification. Sabine and Felix Eichbauer took over in 2016 and have worked fully biodynamically according to Demeter standards since 2022; the Demeter logo appears on the label. The estate belongs to the respekt-BIODYN association of 36 European winegrowers.
