About this wine
Character
A Brunello that favours clarity over fullness. Sorgente ripens late, the heavy soils stretch out the ripening process, and the wine still keeps a cool core: dark cherry, dried herbs, underlaid by a salty, stony trace. Nothing about it is sweet or broad.
Terroir and origin
The 4.5 hectares of Podere Salicutti lie about 35 kilometres from the Tyrrhenian Sea, on 60- to 80-million-year-old marlstone, calcareous marl soils. The Sorgente vineyard itself extends across 450 metres of altitude. Donkeys graze between the olive trees, chickens peck through the vine rows, bees work the orchard: a vineyard run like a garden.
Grape variety and vinification
Exclusively Sangiovese, selected grape by grape by hand. Cellar master Gianni Fabbri bottles around 15,000 to 20,000 bottles a year; the Brunello ages for a long time in wood before leaving the estate.
On the palate
Dry, dense and juicy, with ripe, fine-grained tannin and lively acidity. Amarena and violet up front, then leather, undergrowth and spice, with a long, precise finish. A few years in the cellar give it additional depth.
Food pairing recommendations
Bistecca alla Fiorentina, wild boar ragù with pappardelle, or Ossobuco. Simpler, but equally fitting: aged Pecorino di Pienza with good bread.
Distinctive features
Salicutti became Montalcino's first certified organic estate in 1996; since 2022, Sabine and Felix Eichbauer have worked entirely biodynamically according to Demeter guidelines, as members of the respekt-BIODYN association of 36 European winegrowers. The Demeter logo appears on the label. In the cellar, a turquoise glass column by Massimiliano Fuksas breaks through the Tuscan stonework.
