About this wine
Character
A Brunello of uncompromising clarity: dark cherry, plum, violet and dried herbs over fine-grained tannin. The Brunellos from Podere Salicutti are regarded as the "Holy Grail of Sangiovese purity," and the Sorgente, with its spice, shows exactly where that reputation comes from.
Terroir and origin
The single vineyard Sorgente sits at 450 metres in Montalcino. Its heavy soils give the wine substance and slow the ripening of the grapes. Beneath the estate's 4.5 hectares lies marl 60 to 80 million years old, a limestone-rich soil that Sangiovese loves. The Mediterranean climate, 35 kilometres from the Tyrrhenian Sea, keeps the fruit ripe while the acidity stays lively.
Grape variety and vinification
Pure Sangiovese, every bunch hand-selected. Cellar master Gianni Fabbri vinifies this single variety exclusively, producing 15,000 to 20,000 bottles a year for the entire estate. The Brunello ages for a long time in wood.
On the palate
Dense and powerful, with finely polished tannin, juicy dark cherry and precise acidity. The finish stays spicy, and the Magnum format gives the wine years to evolve.
Food pairings
With wild boar ragù with pappardelle, bistecca alla fiorentina, roast leg of lamb with rosemary, or aged pecorino di Pienza.
Highlights
Sabine and Felix Eichbauer run the estate, the first in Montalcino to receive organic certification, in 1996. Since 2022 they have farmed biodynamically under Demeter guidelines, whose logo appears on the label. Salicutti belongs to the respekt-BIODYN association of 36 European winegrowers. Donkeys graze among the olive trees, and chickens peck between the vine rows.
