About this wine
Character
Piaggione is the most powerful of Podere Salicutti's three single vineyards, and the wine draws its stature from the stone, not from abundance. Densely built, clearly defined, with ageing potential. The magnum gives it even more time than the standard bottle.
Terroir and origin
The Piaggione vineyard faces east-southeast on fossil-rich, calcareous soils over marl that is 60 to 80 million years old. Montalcino lies around 35 kilometres from the Tyrrhenian Sea, in a Mediterranean climate. Salicutti became the region's first organic-certified estate in 1996; since 2022, Sabine and Felix Eichbauer have farmed the 4.5 hectares entirely biodynamically.
Grape variety and vinification
Single-varietal Sangiovese. Cellar master Gianni Fabbri produces 15,000 to 20,000 bottles a year, with every bunch hand-selected. Donkeys graze among the olive trees, chickens peck between the vine rows.
On the palate
Ruby red with a garnet rim. On the nose, dark cherry and wild berries, followed by violet, dried herbs, leather and undergrowth. The attack is juicy, the tannin fine-grained and firm, the acidity keeps the fruit lively. The finish is long and dry, with a distinct chalky note.
Food pairings
Pairs with bistecca alla Fiorentina, pappardelle with wild boar ragù, braised lamb shank or porcini risotto. For cheese, a mature Pecorino di Pienza is an excellent match.
Special features
Salicutti belongs to the respekt-BIODYN association, which unites 36 European winegrowers; the label carries the Demeter logo. The cellar houses a turquoise glass column designed by architect Massimiliano Fuksas. 14.5% vol., dry.
