About this wine
Character
A Brunello built on juiciness and pace rather than power: multi-layered on the nose, precise in its fruit, with a drinkability that never lets up. The magnum format gives this wine all the room it needs.
Terroir and origin
The 1.5-hectare Sorgente cru sits at 450 metres, right behind the Podere Salicutti cantina. Heavy clay and sandy soils along with stony galestro soil delay the grapes' ripening, while an underground water source spares the vines hydric stress. What grows here is fresh and richly facetted, with a fine tannic structure — in the face of climate warming, this delayed ripening turns into an advantage.
Grape variety and vinification
Single-varietal Sangiovese from vines planted by Francesco Leanza in 1994, on soils that have never come into contact with conventional pesticides. Every bunch is hand-selected; winemaker Gianni Fabbri vinifies Sangiovese exclusively, producing 15,000 to 20,000 bottles a year.
On the palate
A supremely juicy entry of crystalline cherry, generous yet precise. The fine-grained tannins feel almost powdery, recalling dark chocolate, coffee crema and light toasty notes. Ripe acidity stays in the background, keeping everything in motion.
Food pairings
With Bistecca alla Fiorentina, pappardelle with wild boar ragù and aged Pecorino Toscano.
Highlights
Salicutti was Montalcino's first certified organic winery. Sabine and Felix Eichbauer carry that legacy forward, farming biodynamically under Demeter guidelines since 2022 and as members of the respekt-BIODYN association. The Demeter logo appears on the label.
