About this wine

Character

Teatro is Podere Salicutti's coolest and latest-ripening south-facing vineyard, and the Riserva draws its character from exactly this coolness: sour cherry and violet, followed by dried herbs and cedarwood, all held together by taut tannin and a saline minerality. A Brunello of clear line rather than broad gesture.

Terroir and origin

The Teatro single vineyard lies at 520 metres above Montalcino, around 35 kilometres from the Tyrrhenian Sea. The vines root in 60- to 80-million-year-old marl stone, calcareous marl soils. Across the estate's 4.5 hectares, donkeys graze among the olive trees and chickens peck between the vine rows. Since 2022 the estate has worked entirely biodynamically under Demeter guidelines.

Grape variety and vinification

Pure Sangiovese, every grape selected by hand. Cellar master Gianni Fabbri vinifies this variety exclusively; the Brunello ages for a long time in wood, as required by the appellation. In total, 15,000 to 20,000 bottles are produced each year. The magnum format gives the wine more time in the bottle.

On the palate

Powerful yet slender in structure: ripe, fine-grained tannin, juicy acidity, notes of redcurrant and dark plum, a touch of clove and leather. The finish remains long and mineral.

Food pairings

With Bistecca alla Fiorentina, pappardelle with wild boar ragù, rack of lamb or aged Pecorino Toscano. Truffle dishes and braised ossobuco also work well. Use a large decanter and allow some time.

Special features

Sabine and Felix Eichbauer have run the estate since 2016; in 2018 the architect placed a turquoise glass column by Massimiliano Fuksas in the old cellar. Salicutti is one of 36 European winegrowers belonging to the respekt-BIODYN association.
