About this wine
Character
The Bufadors Les Voranes Brut Nature 2020 is the third release of a young project by the Recaredo winemakers around Ton Mata: bottle fermentation in its rawest form, without sulphur, without dosage. The nose opens cool and restrained, with bitter apple, tart pear and peach up front, followed by quince and a hint of cider. Green fennel and artichoke remain mere suggestions, while juniper and allspice lend backbone. A chalky, linear base note sets the pace and keeps the aromatics airy.
Terroir and origin
Recaredo works in Catalonia, on the right bank of the Bitlles, in the hilly landscape of the coster del Bitlles. Its 50 hectares of estate vineyards sit on distinctly calcareous soil, low in organic matter; the white stones between the rows make that immediately clear. Ton Mata, grandson of the founder, farms them biodynamically.
Grape variety and vinification
Xarel·lo and Macabeu. The must already begins fermenting in the vineyard and later serves as a starter. Nothing is added: no yeasts, no sugar, no additives, and neither fining nor filtration. Protection and stability come solely from time on the lees and carbon dioxide, over at least two and a half years. Tirage on 14.9.2020, disgorged on 22.2.2024 after 40 months of ageing, residual sugar 0.06 g/l.
On the palate
Ripe yellow fruit carries the wine: mango, apricot, peach and a pineapple note with toasty overtones. Tarter notes of pear and apple set fine bitter notes against it, warm oriental spices add depth without the vegetal side taking over. The carbonation stays restrained, the acidity cuts through the fruit's sweetness. On the finish, highly aromatic herbal notes. At 10.5% ABV, the wine stays light yet still dense.
Distinctive features
Since 1924, Recaredo has bottled exclusively Brut Nature, meaning without any dosage, and disgorges by hand, without freezing. Bufadors takes this philosophy to its logical end: what's in the bottle is only what the grape and time have produced.
