About this wine

Character

A highly aromatic, ripe and dense Chardonnay that shows itself unadorned and full of vitality. The nose offers yellow pear, cellar apple, peach along with ripe lemon and mandarin, followed by lemongrass, ginger, verbena, beeswax and quince down.

Terroir and origin

Clos Béru is the estate's monopole vineyard: five hectares in eastern Chablis, at 300 metres altitude, enclosed by a wall dating back to the 13th century. The slope faces south, is not very steep but very stony, with soil of typical Kimmeridgian limestone. The monks drew the boundaries at the time following the terroir, which is why the clos has the shape of a skewed trapezoid. It was never classified as Premier Cru, since the vineyard was leased out at the time of the early death of Comte Éric de Béru.

Grape variety and vinification

Pure Chardonnay. Athénais de Béru farms the vineyard biodynamically, with the soil worked by horses rather than heavy machinery. In the cellar, intervention is kept to a minimum: spontaneous fermentation with the natural yeasts, aged in tonneaux during the first year, then in tank. Bottling was carried out by Gaëlle Ribé at the new winery, with minimal sulphur.

On the palate

Open and ripe, with plenty of power and drive. The acidity is silky at first, then becomes more insistent, the dry extract lends substance, while the green and yellow fruit shows through, at times crisp, at times fleshy. The finish brings oyster shell and salt and carries a long way. 13.0% vol., dry.

Food pairing recommendations

With oysters, scallops, turbot in butter sauce, veal sweetbreads and aged Comté.

Distinctive features

1500 ml magnum from a vineyard belonging exclusively to Château de Béru. Demeter logo on the label. The vines root into the limestone of an ancient sea, threaded with fossilised oyster shells.
