About this wine
Character
A Chablis of purist clarity, grown in the monopole vineyard of Château de Béru. Cool, saline, sharply defined, with fruit that never outgrows the structure.
Terroir and origin
Clos Béru lies in eastern Chablis at 300 metres altitude, five hectares enclosed by a 13th-century wall. South-facing, moderately sloped, very stony, on typical Kimmeridgian limestone with fossilised oyster shells. The boundaries were once drawn by monks along the terroir, hence its irregular trapezoid shape.
Grape variety and vinification
Chardonnay from biodynamic farming; the label carries the Demeter logo. Horses work the rows instead of heavy machinery, and the estate produces its own preparations. Fermented spontaneously with indigenous yeasts, aged the first year in tonneaux, then in tank. 12.5% ABV, dry.
On the palate
Decanted, it unfolds a fruity and mineral fireworks display that carries through on the tongue: citrus, candied grapefruit, quince, apricot and honeydew melon meet stony coolness, seaweed and dried oyster shell, alongside grain, dry pastry, almonds, light tobacco, herbs and delicate notes of porcini and brioche. Taut, chalky, clearly structured; saline notes and pronounced acidity get the mouth watering, while the fullness stays linear and powerful. Best not served too cold, from a large glass; it gains a few days after opening.
Food pairings
Porcini with sea salt, fennel and seaweed crackers, spiny lobster with lemongrass-almond milk-grapefruit-butter-shallot sauce and basmati rice, or puff pastry vol-au-vents with veal sweetbreads, oysters and morels.
Special features
Athénais de Béru has run the estate since 2004 and converted it to organic, later biodynamic, farming. The Clos is not classified as Premier Cru: it was leased out at the time of classification, and the family never pursued it further. A wine that rewards cellaring.
