About this wine
Character
A Chablis of cool elegance: delicate fruit, lively acidity and a saline streak that keeps the wine dry and refreshing. The long ageing on fine lees gives it juiciness without masking its clarity.
Terroir and origin
The cuvée comes from the estate's northern plots in eastern Chablis, around the Renaissance property of Château de Béru. At 300 metres of altitude, Kimmeridgian limestone dominates, formed around 150 million years ago from the sediments of an ancient sea and studded with fossilised oyster shells. The elevation extends the growing season, allowing the grapes to ripen slowly at moderate temperatures.
Grape variety and vinification
Pure Chardonnay. The grapes are carefully selected and gently pressed, and fermentation begins spontaneously with the vineyard's natural yeasts. The wine then ages for a long time on fine lees in vats and barrels, an élevage that highlights the terroir rather than the wood.
On the palate
On the nose, apple, pear and apricot, joined by delicate toasted notes of almond and clear hints of shell and sea breeze. The palate opens lean and precise, the acidity carries it through, and the saline note lingers into the finish.
Food pairings
Sole fillets with chervil-Chablis sauce and braised fennel, a seafood platter with fruity olive oil and crusty baguette, or chanterelle risotto with green asparagus.
Highlights
Athénais de Béru, at the helm of the family estate since 2004, farms the vineyards biodynamically: horses instead of heavy machinery, home-made preparations, and cover crops between the rows. The label carries the Demeter logo. Dry, 13.0% vol., bottled as a 1500 ml Magnum.
