About this wine

Character

A cool, silky Cabernet Franc from Anjou. On the nose, mulberry, cassis, violet and liquorice vie for the lead, surrounded by plum, blackberry and blueberry, along with cinnamon, clove and aniseed, closing on a herbal note of lovage, rosemary and thyme. The fruit feels densely woven, never heavy.

Terroir and origin

The vines grow in Ambillou-Château, 90 metres above sea level and 120 kilometres from the Atlantic, where warm days meet cool nights. Part of the vineyard is rooted in clay-silt soil over sandstone, part in red flint above tuffeau, the region's characteristic limestone. The vines are 45 to 55 years old, yielding 40 hectolitres per hectare.

Grape variety and vinification

Single-varietal Cabernet Franc, hand-harvested into 12-kilo crates and destemmed. Fermentation lasted 30 days, with only occasional pump-overs. This was followed by twelve months on fine lees in five- to seven-year-old Burgundian pièces, then a further six months in barrel. 13.0% vol., dry.

On the palate

Dense dark fruit, as if wrapped in silk, cool and juicy. The finish is marked by red pepper, both raw and cooked, while the floral notes return. A gripping acidity holds the cool frame together, with no perceptible tannin. Fleshy and bloody in the best sense.

Food pairing suggestions

Braised pork cheek with spiced jus and savoy cabbage, short rib with hoisin sauce and sautéed pak choi, or, for a vegetarian option, salt-baked beetroot with basil pesto.

Highlights

The estate lay fallow for three years before Anne-Claude Leflaive acquired it in 2008 with her husband, Christian Jacques; its name honours the previous owners, Claude and Nelly Pichard. Since her death in 2015, Christian Jacques and cellar master Sylvain Potin have carried the work forward. Biodynamic since 2000, certified, with the Demeter logo on the label.
