About this wine

Character

Taut, cool and ferrous in tone, yet generous: the wine shows Syrah fruit in unadorned form, set against a stony, mineral backbone. Classic traits and the wildness of a natural wine sit side by side here.

Terroir and origin

The grapes grow on two hectares in the Tupin and Côteau du Tupin sites, on slopes with a 40 percent gradient. The subsoil consists of leucogneiss and quartz, the vines are 15 to 40 years old, and yield is around 30 hectolitres per hectare. The name Les Binardes comes from Napoleon's land register.

Grape variety and vinification

90 percent Syrah, complemented by 10 percent Viognier. After harvest, the whole clusters undergo a cold maceration, after which they are mostly destemmed and fermented using the semi-carbonic method, accompanied by regular pump-overs and punch-downs. The wine clarifies through natural sedimentation and matures for twelve months in cement tank. Additives, filtration and sulphur are all avoided.

On the palate

Over dark fruit of elderberry, blackberry, mulberry and sweet cherry lie white and black pepper, juniper and cinnamon, alongside liquorice, black tea and fresh rosehip. On the palate it remains lean and silky, the spice of liquorice, white pepper and juniper carrying far into the finish. Garrigue, rosemary, thyme and green olive lend the Mediterranean touch.

Food pairing suggestions

With roast saddle of lamb with an olive, feta and bean gratin, with orecchiette puttanesca or with artichoke with bulgur and rocket.

Specifics
