About this wine
Character
A Champagne with absolutely no dosage: zero grams of residual sugar, giving it a correspondingly austere, linear style. Acidity carries the wine, the texture stays chalky, and alcohol sits at 12.0% Vol.
Terroir and origin
Les Riceys in the southern Champagne region, on the Côte des Bar, is the only village in the region permitted to produce three appellations: Champagne, still wine and Rosé des Riceys. Beneath the vines lies Kimmeridgian chalk, the foundation of the wine's saline minerality. Olivier Horiot has farmed the estate biodynamically since 2010, ploughing the soils with horses and excluding all synthetic inputs.
Grape variety and vinification
Chardonnay and Pinot Blanc meet Arbanne, a nearly extinct variety that Horiot is cultivating anew; he vinifies all seven grape varieties permitted in Champagne. Each parcel is harvested and vinified separately, with spontaneous fermentation using wild yeasts in used barriques. The wine is neither fined nor filtered, and sulphur use is kept to a minimum.
On the palate
Ripe apple and lemon zest, alongside brioche pastry and a chalky spice note. The attack is bone-dry, the acidity clearly defined, the finish long and saline.
Food recommendations
Oysters, seared scallops and scallop sashimi; also turbot with lemon butter, aged Comté or caviar.
Special features
The Horiot family has grown vines in Les Riceys since the 17th century. Olivier Horiot took over the estate from his father Serge in 1999 and immediately converted it to organic farming; his wife Marie runs the cellar. The estate spans around 8 hectares, and every wine is bottled with no dosage. The estate belongs to the Terres et Vins winegrowers' association. This bottle holds 1500 ml.
