About this wine

Character

A Champagne that places minerality and spice above fruit. This starkness never feels deliberate, only natural, and despite its purism the wine remains candid and approachable.

Terroir and origin

Les Riceys is the only village in Champagne permitted to produce three appellations: Champagne, still wine, and Rosé des Riceys. The Horiot family has cultivated vines here since the 17th century. Beneath the parcels lies Kimmeridgian chalk, which gives the wines their pronounced minerality. The soils are ploughed with horses, and each parcel is harvested and vinified separately.

Grape variety and vinification

Pinot Noir and Pinot Blanc, the latter one of four rare varieties Olivier Horiot tends alongside the three classic ones. Fermentation happens spontaneously with wild yeasts in used barrels, with a practised, controlled oxidation of the must. The wine is bottled without filtration or fining, with minimal sulphur, and as Brut Nature — meaning without any dosage at all.

On the palate

In the glass, a deep golden yellow with bright glints and a brisk perlage. The nose is stony and crisply cool, with tart Amalfi lemon, fine brioche pastry, lemon tart, and sourdough crust, alongside herbal and vegetal notes: star anise, fennel seed and fresh fennel on one side, lemongrass, chervil and lemon balm on the other. On the palate it all comes together as one: the racy, well-judged acidity pushes the mousse aside, leaving little room for the reticent fruit. Herbs and a citrus edge linger on the finish.

Distinctive features

Olivier Horiot took over the estate from his father Serge in 1999 and immediately converted it to organic farming; he has worked biodynamically since 2010. His wife Marie runs the cellar. Horiot vinifies all seven permitted Champagne grape varieties, including the nearly extinct Arbane, and bottles all his Champagnes without dosage. He is a member of the winegrowers' association Terres et Vins.
