About this wine
Character
A sparkling wine of great precision: saline, mineral, bone dry and yet creamy. The fine perlage carries a sparkling wine with pressure and substance, made entirely without dosage.
Terroir and origin
The grapes grow on limestone and variegated sandstone in Gimmeldingen, Mussbach and Ruppertsberg. Old vines from the 1980s form the backbone, complemented by plantings from 2018. In the vineyards of the Mittelhaardt, the estate works according to the guidelines of respekt-BIODYN. The cool nights flowing down from the Palatinate Forest give the grapes the acidity on which this sparkling wine is built.
Grape variety and vinification
The cuvée consists of 40% Pinot Noir and 30% each Chardonnay and Pinot Blanc. Harvesting is done by hand in 8-kilo crates, with no more than thirteen minutes passing from grape to press. The base wine fermented spontaneously in oak, the base sparkling wine was bottled in May 2023 and rested 30 months on the lees. Disgorgement took place in November 2025, with no dosage. No added sulphur, no fining, 11.5% ABV.
On the palate
On the nose, chalk and flint, pronounced citrus, along with quince, mirabelle plum and apple skin, underscored by brioche and freshly baked baguette, with a subtle touch of almond and hazelnut. On the palate, fine, lively carbonation, bone dry yet charming. A sparkling wine equally suited to the apéritif and the table.
Special features
The estate was founded in 2019 by Steffen Christmann, his daughter Sophie Christmann and Mathieu Kauffmann, who spent thirteen years as chef de cave at Bollinger. It is Germany's first fully biodynamic sparkling wine estate. The numbering system is a statement in itself: numbers in the two-hundreds denote the Burgundian cuvées, with the final digit recording the disgorgement.
