About this wine
Character
A rosé grower's sparkling wine that relies on clarity rather than effect: an elegant peach hue in the glass, a very fine, broadly spread perlage, with small red wild raspberries, red apple and vine peach on the nose. With air, hazelnut, cedarwood and a hint of cinnamon join in. A fine bitter herbal note keeps any candied sweetness at bay.
Terroir and origin
The grapes grow on the Gimmeldinger Kapellenberg in the Palatinate, on loess loam and limestone, from vines planted in 1990. The cool nights flowing down from the Palatinate Forest preserve the acid freshness in the berries that a sparkling wine depends on.
Grape variety and vinification
Pure Pinot Noir, harvested in September 2021, by hand, in 8-kilo crates; no more than thirteen minutes pass between grape and press. The must fermented spontaneously in oak barrel, and bottling took place in May 2022. After 43 months on the lees, disgorgement followed in November 2025, with no dosage: Brut Nature in the true sense of the word. The estate forgoes sulphur and fining.
On the palate
Salty-sweet orientation, carried by yeasty notes and animating spice, with great length on the finish. Dry, 12.0% vol. A sparkling wine that opens the palate and carries just as well through an entire meal.
Special features
Christmann & Kauffmann was founded in 2019 out of an email and twelve hectares of vineyard: Steffen Christmann, an eighth-generation winegrower and VDP president, his daughter Sophie Christmann and Mathieu Kauffmann, thirteen years cellar master at Bollinger. It is Germany's first fully biodynamic sparkling wine estate, with spontaneous fermentation in large oak barrels and long lees ageing as its house style.
