About this wine

Character

A grower's sparkling wine of cool precision. Multi-layered and nuanced without ever raising its voice: radiant golden yellow in the glass with a very fine, dense perlage, uncompromisingly dry in style.

Terroir and origin

The Gimmeldinger Meerspinne, historically known as Mersbin, lies on the eastern spur of the Gimmeldingen valley in the Palatinate. The eastern exposure and the cool nights descending from the nearby Palatinate Forest preserve the acidity of the grapes. The soil consists of variegated sandstone gravel and loess over limestone.

Grape variety and vinification

Single-varietal Chardonnay from vines planted in 1995. Harvested by hand in August 2020 into 8-kilo crates; no more than thirteen minutes pass between grape and press. The base wine fermented spontaneously in oak and was bottled in June 2021, where it spent 54 months on the lees. It was disgorged in November 2025 without dosage — a Brut Nature in the truest sense of the word. No added sulphur, unfined.

On the palate

The nose unfolds citrus, quince, vineyard peach and yellow apple, complemented by dry pastry, samphire and a salty note of sea breeze. On the palate, finesse and invigorating freshness take the lead, with fine, supportive carbonation. Bone-dry and razor-sharp, with a long, cool finish.

Special features

The Christmann & Kauffmann sparkling wine estate was founded in 2019, when Steffen Christmann, his daughter Sophie Christmann, and Mathieu Kauffmann, thirteen years chef de cave at Bollinger, took over twelve hectares. It is Germany's first entirely biodynamic sparkling wine estate, working on the principle of terroir over technique. 12.0% vol.
