About this wine
Character
Cool, bone-dry, full of tension. Clément and Antoine Pertois run the estate in Cramant in the fifth generation and produce exclusively Grand Cru Blanc de Blancs. This Champagne shows just how much pressure and aromatic precision Chardonnay can develop on chalk.
Terroir and origin
The single vineyard Derrière le Mont Aigu lies in Chouilly, a Grand Cru village on the Côte des Blancs. The deep chalk soils give the wine its vibrant tension. In total, the house farms 44 parcels across 9.5 hectares in the Grand Cru villages of Cramant, Le Mesnil-sur-Oger, Chouilly, Oger and Oiry, and is converting its vineyards to organic farming. Yields remain low, and harvesting is done by hand.
Grape variety and vinification
100% Chardonnay from the 2015 vintage, vinified parcel by parcel. Depending on the cuvée, the base wines age in stainless steel, in wood or in sandstone amphorae, with the wood never meant to dominate. Malolactic fermentation is decided vintage by vintage and parcel by parcel. At least three years on the lees, each bottle hand-riddled. As an Extra Brut, the dosage remains very low. 12.0% ABV.
On the palate
The entry is dry and focused: lemon zest and green apple, with brioche and a chalky note. Taut acidity carries the wine, while the long lees ageing lends a creamy texture beneath without softening its acid grip. The finish is long and saline.
Food pairings
With oysters, with scallops, including as sashimi, and with Iberico ham.
Special features
A single-vineyard Champagne from a grower estate that cultivates, vinifies and markets its own grapes. The magnum format slows the ageing process. A wine that demands time in the glass and attention.
