About this wine
Character
A Blanc de Blancs still poised between lees-derived spice and blossom-fruit, drawing its tension from that balance. Butterscotch and Christmas stollen from lees ageing sit alongside white peach, nashi pear and lime zest, joined by apple and almond blossom as well as daisies.
Terroir and origin
The estate is located in Cramant, at the heart of the Côte des Blancs. Around eight hectares, planted exclusively with Chardonnay, are spread across the grand cru sites of Chouilly with its deep chalk, Le Mesnil-sur-Oger with its minerality, and Cramant with its elegance. Each parcel is vinified separately, yields stay low, and harvesting and selection are done by hand. Chemical intervention is kept to a minimum so the soil stays alive.
Grape variety and vinification
100% Chardonnay. The base wines age in stainless steel tanks and partly in old wooden casks that contribute no oak aroma but allow gentle oxidative maturation. Malolactic fermentation is decided case by case, depending on the vintage and the parcel. This is followed by an extended lees ageing, at least three years at the estate, and a dosage at Extra Brut level. 12.0% ABV.
On the palate
Powerful and carried by precise acidity, at once youthful and fresh. This is not the austere, mineral reading of Chardonnay, but its open-hearted one: easy to understand and consistently invigorating. The finish is marked by herbs, both freshly picked and dried, with clover at the forefront, alongside lemon balm and kaffir lime leaf.
Distinctive features
A grower Champagne in the truest sense: own vineyards, own pressing, own marketing, every bottle riddled by hand, keeping production correspondingly limited. The 3000 ml double-magnum gives the wine a slower pace of maturation.
