About this wine

Character

A Champagne that demands attention and rewards it. The nose remains cool and deeply mineral at first, with shellfish, salted almonds, crusty white bread and salted butter; only with air do citrus notes, green apple and quince flash through. In the glass, a radiant golden yellow with very fine perlage.

Terroir and origin

The grapes come from the Grand Cru sites Chétillon and Chétillon de Haut in Le Mesnil-sur-Oger, one of the most famous sites in Champagne. The vines are over 40 years old. From Cramant, Pertois-Lebrun farms around eight hectares in the Grand Cru sites of Chouilly, Le Mesnil-sur-Oger and Cramant, planted exclusively with Chardonnay, on chalk soils, with low yields and hand harvesting. Each parcel is vinified separately.

Grape variety and vinification

100% Chardonnay from the 2016 harvest. The base wine matured for ten months, 53% in stainless steel tank and 47% in oak barrel, without fining or filtration. After the second fermentation, the Champagne rested on the lees for at least seven years; each bottle is riddled by hand. The dosage remains at 2.5 g residual sugar, placing it in the Extra Brut category.

On the palate

Striking and carried by lively carbonation, with lemon and delicately bitter grapefruit. The long lees ageing lends substance without softening its linear precision.

Food pairing recommendations

An aperitif Champagne that works just as well on its own as with classic delicacies of French cuisine.

Special features

A single-vineyard Champagne from a grower estate that cultivates, presses and markets its own grapes. Old vines, an uncompromisingly low dosage and ageing without oenological corrections make it a wine with enormous ageing potential.
