About this wine
Character
A Champagne that dispenses with two safety nets: Brut Nature means no dosage, Sans Sulfites Ajouté means no added sulphur. What remains is Chardonnay in a cool, direct form, clear and demanding. This is not an aperitif to sip absent-mindedly, but a wine that demands attention and rewards it over an hour or more in the glass.
Terroir and origin
The grapes come from the site behind the Mont Aigu in Chouilly, a Grand Cru commune of the Côte des Blancs. The deep chalk soils give the wine its cool tension. The family estate Pertois-Lebrun is based in Cramant and farms around eight hectares in the Grand Cru sites of Chouilly, Le Mesnil-sur-Oger and Cramant, planted exclusively with Chardonnay. Each parcel is vinified separately.
Grape variety and vinification
Pure Chardonnay, hand-harvested and selected, with yields kept low and chemical intervention in the vineyard reduced to a minimum. The base wines age in stainless steel tanks and partly in old wooden barrels, without the wood imparting flavour; the malolactic fermentation is decided by vintage and parcel. This is followed by lees ageing of at least three years, riddled by hand.
On the palate
Bone dry at 12.0% vol., carried by taut acidity. Lemon zest and green apple set the tone, followed by white blossom and fine brioche from the lees ageing, which lends the acidity a creamy texture without ever softening it. The finish is long, saline and chalky.
Food pairing recommendations
With oysters, sashimi and sole carpaccio, as well as with fresh goat's cheese, roasted cauliflower or a poultry terrine.
Special features
Grower Champagne made from the estate's own grapes, pressed and marketed by the producer itself. Production is deliberately kept small.
