About this wine
Character
A dry Chardonnay from Baden that expresses the estate's Burgundian style in a clear, approachable form. At 12.5% ABV it stays lean and easy to drink without losing structure.
Terroir and origin
The Kaiserstuhl is defined by volcanic soils that lend the wines their minerality. Franz Keller farms 35 hectares including six VDP Grosse Lagen, from Achkarrer Schlossberg to Oberrotweiler Kirchberg. Friedrich Keller calls this origin "Baden's Burgundy". The name Drei Dörfer (three villages) refers to grapes sourced from several communities in the region.
Grape variety and vinification
A single-varietal Chardonnay that finds excellent conditions on the Kaiserstuhl. Since 2013 the estate has worked in a cellar built into the slope in terraces, allowing gentle élevage using the gravity-flow principle. Winemakers Uwe Barnickel and Christian Häuber follow the maxim "as little as possible, as much as necessary": minimal intervention, precise vinification. Since 2016 the estate has been gradually converting to organic farming with biodynamic elements.
On the palate
Dry and precise, carried by vibrant acidity. Lemon and green apple stay clearly defined, followed by white blossom and a touch of pear. A saline minerality gives length to the finish.
Food pairings
A versatile companion to pan-fried pike-perch with herb butter, white poultry in mushroom cream sauce or chanterelle risotto. Also a fine choice with pasta in a light sauce, poultry terrine and tender veal escalope.
Distinctive features
The estate is home to the restaurant Schwarzer Adler, which has held a Michelin star continuously for over 55 years; Irma Keller cooked there as Germany's first female Michelin-starred chef. Around 400,000 bottles are produced each year.
