About this wine
Character
A Premier Cru of quiet stature: fine-grained tannin, aromatic depth, structure without heaviness. Jean-Louis Trapet runs the domaine in its seventh generation according to one simple principle: guide, never force.
Terroir and origin
The Les Combottes vineyard lies in the northern part of Gevrey-Chambertin, on the border with Morey-Saint-Denis and directly beside the grands crus. Limestone-rich clay soil on the mid-slope of the Côte de Nuits gives the wine its cool minerality. The 2023 vintage produced ripe grapes while retaining freshness.
Grape variety and vinification
Pinot Noir, thin-skinned and sensitive, a direct mirror of its plot. Since 1996, Jean-Louis Trapet has farmed the domaine's 18.5 hectares biodynamically: precise soil work, observation rather than intervention. In the cellar he works by gravity and uses restrained oak ageing that never masks the fruit. 13.5% vol., dry.
On the palate
Dark cherry, raspberry and strawberry lead, joined by violet, delicate spice and damp forest floor. The tannin is silky and well integrated, the acidity lively, the finish long and mineral.
Food pairings
With roast duck in cherry sauce, coq au vin, bœuf bourguignon or saddle of wild boar with forest mushrooms. Also with aged Comté and Époisses. When drunk young, it benefits from decanting.
Special features
In the 1880s, Arthur Trapet secretly grafted his vines onto American rootstock, forbidden at the time, legalised in 1888 and today the foundation of the estate's viticulture. His creed still holds in the family today: «Les hommes passent et la terre reste». Ageing potential: 10 to 15 years.
