About this wine

Character

The Haute Volée 1er Cru Blanc de Noirs Extra Brut is a Champagne made from Pinot Noir and Pinot Meunier, its grapes drawn primarily from the Montagne de Reims, and it does not seek its effect through power. It remains pale and transparent, the fruit of the two dark grape varieties showing as a shimmer rather than weight.

Terroir and origin

The soils of the Montagne de Reims here are marked by limestone, chalk, loam, clay and flint. The house is based in Avize, where Marie-Hélène and Vincent Waris began in 1989. Today their three children run the estate: Jean-Philippe in the vineyard, Pierre-Louis as architect of the vision, Inès as designer of the labels.

Grape variety and vinification

Pinot Noir and Pinot Meunier, pressed white. Vinification has been in Jean-Philippe's hands since 2009; he trained with Benoît Lahaye, a pioneer of biodynamics in Champagne. His most notable intervention is the reduced bottle pressure: 4.5 bar instead of the usual six, which makes the bead finer and the Champagne silky. Dosage is 5 grams, declared as Extra Brut.

On the palate

In the glass, pale yellow with a fine mousse. The nose remains discreetly fragrant: white blossom, red berries, grapefruit, apple skins and patisserie, with hazelnut and oyster shell in the background. On the palate a sensuous texture with lively acidity, juicy pale and slightly reddish fruit, along with oyster shell and herbs. The pressure stays restrained, the balance is right.

Special features

The estate's nine hectares were converted to biodynamic farming in 2011; Waris-Larmandier has been Demeter-certified since 2020, with the logo featured on the label. The floral motifs on the labels are Inès's work, each cuvée bearing a different flower. 12.0% vol.
