About this wine

Character

A vintage Champagne that clearly reflects the house style: purist, mineral-driven, taut. Waris-Larmandier bottles its Champagnes at 4.5 bar rather than the usual 6. This makes the mousse creamier and the bubbles finer, and the wine opens up immediately.

Terroir and origin

Avize is one of the Grand Cru villages of the Côte des Blancs and home to the estate founded in 1989 by Marie-Hélène and Vincent Waris. The family's nine hectares lie within the Grand Crus of Avize, Cramant, Chouilly, Oger and Le Mesnil-sur-Oger. The chalk soils give the Chardonnay its saline minerality and clean freshness.

Grape variety and vinification

100 percent Chardonnay from a single vineyard and a single vintage. The vines on these single-plot parcels were planted in 1962 and 1963, making them over 60 years old. Fermentation happens spontaneously in used Burgundy barrels, with sulphur added only at bottling. Before disgorgement, the wine ages at least five years on the lees. 12.5% ABV.

On the palate

Pale golden yellow with greenish highlights, fine and persistent mousse. On the nose, white flowers, lemon, green apple and brioche over a chalky minerality. Dry and taut on the palate, with grapefruit, a saline note and subtle yeasty spice. The finish is long and mineral.

Food pairings

Oysters and seafood, scallop carpaccio, pan-fried turbot with butter sauce, goat cheese with honey or white truffle risotto.

Special features

Demeter-certified since 2020, with the logo shown on the label. The conversion of the full nine hectares began in 2011 under Jean-Philippe, the eldest son, who took over winemaking in 2009 after training with Benoît Lahaye. The floral label design is by his sister Inès.
