About this wine
Character
A mature Blanc de Blancs from a single parcel, bottled without dosage, drawing its tension from salinity, chalk and ripe fruit. Powerful and energetic, yet fine in acidity and perlage.
Terroir and origin
The single vineyard lies in Cramant, a grand cru village of the Côte des Blancs, at 150 metres and around three kilometres from the estate. Waris-Larmandier farms nine hectares in Avize, Cramant, Chouilly, Oger and Le Mesnil-sur-Oger, biodynamic since 2011 and Demeter-certified since 2020.
Grape variety and vinification
Pure Chardonnay from vines planted in 1969, hand-harvested and pressed in a traditional Coquard press. Only the juice from the first pressing was fermented, spontaneously, in 600-litre Burgundian demi-muids, in which the wine was also aged. Malolactic fermentation followed spontaneously. This was followed by at least five years sur lattes, hand disgorgement, and no dosage.
On the palate
On the nose, yellow pome and stone fruit, orange and grapefruit, alongside butter on warm toast, blond tobacco, quatre épices and garden herbs with a trace of reduction. On the palate, plenty of juice and drive, a light, mouth-watering salinity, vanilla and cinnamon from the wood, bitter-zesty piquancy and beneath it limestone and chalk.
Food pairings
With oysters and pan-fried turbot, with lobster or shaved Parmesan. Wild fowl in a light jus also suits this salinity.
Special features
Waris-Larmandier bottles at 4.5 bar instead of the usual six, which makes the mousse creamier. Jean-Philippe, responsible for vinification since 2009 and trained under Benoît Lahaye, forgoes sulphur for the single vineyards until bottling. 12.0% ABV.
