About this wine

Character

A mature white wine that brings together fruit, spice, herbs and stone. It has body without being opulent, and after nine years of bottle age comes across as elegant, creamy and fully present.

Terroir and origin

The vines grow high on Mont Ventoux. Philippe Gimel's plots lie between 300 and 500 metres of altitude; geologist Claude Bourguignon identified up to six layers of rock here. The cool nights at 400 metres give the wine its freshness. Set among hedges, fruit trees and aromatic herbs, the vineyards resemble gardens more than production sites.

Grape variety and vinification

Grenache Blanc, Clairette and Bourboulenc from vines over 50 years old. Yields were just 20 hectolitres per hectare. The cuvée was fermented and aged in stainless steel, without oak. 14.5% vol., dry.

On the palate

On the nose, vanilla and pear cream, followed by ripe orange, a touch of saffron, a light curry spice note, plus anise and fennel. On the palate round, juicy and silky: ripe white-fleshed fruit meets fennel seed. The minerality is enormous, the finish piquant, finely saline and long.

Food pairings

With pan-fried turbot or sole with herb butter, with saddle of veal with morels, or with aged Comté.

Special features

Philippe Gimel, a trained pharmacy student who later became an oenologist, chose his plots together with Claude Bourguignon. He only releases a wine once he considers it ready: in his view, La Montagne needs eight years of bottle ageing, and he held back the 2017 for nine. In Gimel's assessment, this cuvée can age for around twenty years.
