About this wine
Character
A dense, dry red wine from Toro that carries its power without raising its voice. Concentration and precision stay in balance, and the structure remains taut and composed all the way through the finish.
Terroir and origin
Quinta de la Quietud lies two kilometres south of the Duero, at 700 metres above sea level. The continental climate ranges from -11 °C in winter to 37 °C in summer, with just 350 millimetres of rainfall a year. The soils contain 55 to 85 percent sand and so were never touched by phylloxera: the bush vines planted between 1900 and 1920 grow on their own roots and need no irrigation.
Grape variety and vinification
Tempranillo, known here as Tinta de Toro, sourced exclusively from the oldest plots. Yields stay between 20 and 40 hectolitres per hectare. Horses plough between the gobelet-trained vines, and the estate has been organically certified since 2002 and farms biodynamically. Winemaker Jean-François Hébrard lets fermentation occur spontaneously with native yeasts and adds no sulphur whatsoever; the wine is aged in French oak barriques.
On the palate
Concentrated and deep, carried by dark forest berries and ripe plum, with cocoa, leather and fine toasted notes from the oak. The tannins are present but finely polished, and a cool freshness keeps the 15.5% ABV in check.
Food pairings
Braised beef cheeks and oxtail, herb-crusted roast lamb, bistecca alla fiorentina or juniper-crusted saddle of venison. For cheese, a long-aged Manchego is an excellent match.
Special features
The estate's cult wine, bottled here as a 1500-millilitre magnum. Own-rooted vines over a century old, hands-on vineyard work, and a cellar that adds no sulphur at all.
