About this wine

Character

A bone-dry Blanc de Blancs that puts tension and precision ahead of easy charm. Cool, clear, penetrating, with a tautness that keeps unfolding in the glass with air. A Champagne that demands attention and rewards it.

Terroir and origin

Chouilly is one of the Grand Cru villages of the Côte des Blancs; its deep chalk soils lend the Chardonnay a cool clarity. Working from Cramant, Pertois-Lebrun farms 44 plots across 9.5 hectares in Cramant, Le Mesnil-sur-Oger, Chouilly, Oger and Oiry, planted exclusively to Chardonnay. Yields stay low, and harvesting and selection are done by hand.

Grape variety and vinification

Pure Chardonnay from old vines. Each plot is vinified separately, with the base wines aged, depending on the cuvée, in stainless steel, wood or sandstone amphorae, the wood never meant to dominate. Whether malolactic fermentation takes place is decided by vintage and plot. After at least three years on the lees, which give the wine its creamy texture, it is disgorged as Extra Brut with minimal dosage. Riddling is done by hand, bottle by bottle.

On the palate

Lemon zest, ripe apple and a hint of honey over a vibrant vein of acidity, joined by brioche and toasted hazelnut from the long lees ageing. The finish stays long and dry, with saline chalkiness and an echo of grapefruit.

Distinctive features

The house was founded in 1955, when Paul Pertois and Françoise Lebrun combined their families' vineyards. Today it is run by fifth-generation brothers Clément and Antoine: Clément is converting the plots to organic farming, while Antoine handles the business side. Only Grand Cru Blanc de Blancs is produced. The magnum matures more slowly and develops a finer bead than the standard bottle.
