About this wine
Character
A red wine of cool stature: slender in build, taut, with violets and wet slate as its leitmotif. Dominik Huber and Tatjana Peceric aim for finesse and precision rather than concentration. In magnum, the 2013 vintage matures more slowly, which preserves this wine's dancing character.
Terroir and origin
The Les Tosses vineyard lies in Priorat, where Terroir al Limit farms 15 hectares organically and biodynamically from Torroja del Priorat. Steep slopes, slate, hot summers: Huber counters them with biodynamic preparations in the vineyard and a very early harvest. The slate lays the foundation for the cool, fresh minerality.
Grape variety and vinification
Single-varietal Carignan. Since 2009 the estate has worked with whole-cluster infusion: the berries remain whole, there is no pump-over of the cap, and pigeage is no longer practised. Extraction happens solely through time and contact. The result is 13.5% vol. and a dry wine without hard edges.
On the palate
Silky flow, fresh acidity, fine-grained tannin. The fruit shows dark forest berries, alongside Mediterranean herbs and a stony finish.
Food pairings
With braised leg of lamb with rosemary, crisp-roasted squab breast and saddle of venison. Aged sheep's cheese also works well.
Special features
Les Tosses is one of the estate's single-vineyard selections, which structures its wines along Burgundian lines into village wine and single-vineyard wines. Dominik Huber founded Terroir al Limit in 2004 together with Eben Sadie; since the latter's departure in 2012, he has run the estate with Tatjana Peceric as head winemaker.
