About this wine
Character
A Meursault that favours transparency over opulence: cool fruit, crystalline clarity, no toasty notes pushing to the fore. Rémi Jobard describes his own approach this way: everything in the vineyard and the cellar serves to express the terroir unveiled. This wine needs time to unfold.
Terroir and origin
Les Chevalières is one of the domaine's village lieux-dits in the village of Meursault, alongside Sous La Velle, Narvaux and En Luraule. In total, Rémi Jobard farms nine hectares across Meursault's finest sites. Synthetic fertilisers and pesticides disappeared in 1994, herbicides in 1998; the rows are worked by hand and left to grow cover crops, with no fertilising, while cordon pruning limits yields.
Grape variety and vinification
Chardonnay, pressed very slowly: grapes picked in the morning are pressed for at least six hours, those picked in the afternoon often overnight, so for twelve hours, both at the lowest possible pressure. This way only the finest must reaches the cellar, free of bitter compounds. Ageing lasts around 15 months in 600-litre barrels from master cooper Stockinger, made of French, Austrian and Slavonian oak, of which only about a fifth is renewed each year; the wine then rests in tank. It is bottled unfiltered, with stability coming from two winters of ageing.
On the palate
Taut and clearly defined, with juicy white peach and yellow pear fruit, alongside lemon zest and a touch of hazelnut. The acidity carries the wine, the texture stays fine, and the finish reveals a saline, chalky spiciness.
Food pairings
With sole in beurre blanc, pan-seared turbot, scallops or poultry in a light cream sauce. Also pairs well with Comté and aged goat cheese.
