About this wine

Character

The stature of Nuits-Saint-Georges meets an unusually fine-grained texture here. By his own account, Bruno Clavelier seeks neither colour nor tannin, but transparency and finesse. That is exactly what this Pinot Noir shows: concentration from old vines that stays light, with an almost translucent clarity.

Terroir and origin

Aux Cras is one of the Premiers Crus of Nuits-Saint-Georges, grown on the limestone subsoil that gives this appellation its mineral edge. The vines were mostly planted in the 1930s and 1940s, right after the phylloxera catastrophe; the estate's oldest vines are now over 80 years old, rooting deep into the limestone and naturally yielding small crops. In total, the estate farms 6.5 hectares.

Grape variety and vinification

Single-varietal Pinot Noir, predominantly Pinot Noir Fin, the traditional Burgundian clone. Fermentation lasts around three weeks in open, conical oak vats with indigenous yeasts and up to 30 percent whole clusters, with the cap punched down by hand. After malolactic fermentation in spring, the wine spends 16 to 18 months in Tronçais and Allier oak barrels, only a third of them new. The wine is neither fined nor filtered and is bottled under protective gas.

On the palate

Dark cherry and ripe blackberry, underscored by violet, subtle smoke and damp forest floor. The tannin is fine-grained, the minerality cool, the finish long with graphite and black pepper. 13.5% ABV, dry.

Food pairings

With roast duck breast with red wine jus, game goulash, saddle of venison with mushrooms or roast pigeon with lentils. For cheese, try an aged Époisses.

Special features

Organically certified since 1999 (Ecocert), farmed biodynamically since 2005. Each climat is vinified separately, and all wines carry the "Vieilles Vignes" designation.
