About this wine
Character
"I'm looking for neither color nor tannin," says Bruno Clavelier about his work. This premier cru reflects that: finely structured, cool, of translucent clarity, with depth rather than weight.
Terroir and origin
The Aux Brulées vineyard lies at the northern edge of Vosne-Romanée. The vines here date from the 1930s, planted when Joseph Brosson was rebuilding the domaine plot by plot after phylloxera. They root deep into the limestone subsoil and naturally yield little.
Grape variety and vinification
Pure Pinot Noir, predominantly the traditional Pinot Noir Fin clone. Fermentation takes place with indigenous yeasts in open, conical oak vats, with up to 30 percent whole clusters and hand punch-downs, over about three weeks; malolactic fermentation follows in spring. This is followed by 16 to 18 months of barrel ageing in Tronçais and Allier oak, only a third of it new.
On the palate
Dark cherry, violet and a fine note of smoke, with silky tannins, crisp acidity and a calm, long finish. 13.0% Vol., dry.
Food pairings
Partridge with truffle jus, pink-roasted duck breast, braised veal cheeks or coq au vin; among cheeses, young Comté and Époisses. Serve at 16 to 17 degrees; decanted, the wine gains in definition.
Special features
The crus are neither fined nor filtered, sulfur is kept to a minimum, and bottling is done under protective gas. The domaine farms 6.5 hectares, has been organically certified since 1999 (Ecocert) and has worked biodynamically since 2005; the label states biodynamic cultivation.
