About this wine
Character
A dry Weissburgunder at 11.5% vol. that draws its tension from acidity and structure rather than richness: 2 g/l residual sugar, 5.8 g/l acidity. Lees and a healthy must oxidation shape it, while the fruit stays restrained.
Terroir and origin
The vines stand in the monopole vineyard Wachenheimer Odinstal in the Palatinate, 350 metres above the Rhine valley, in a hollow enclosed by ten hectares of mixed forest with no neighbouring vineyards. The Weissburgunder vines root in three formations: Keuper marl, variegated sandstone and basalt; they were planted in 1988 and 2004. At this altitude, the grapes ripen 20 days later than in the valley.
Grape variety and vinification
Harvest took place from 21 to 28 September, fermentation in stainless steel tank, with five percent whole clusters. Must and wine matured for seven months on full lees; before bottling it was lightly filtered and sulphur adjusted to 56 mg/l. Estate manager Andreas Schumann follows a principle of non-intervention in the cellar: spontaneous fermentation without temperature control, extended lees ageing, minimal use of sulphur.
On the palate
On the nose, walnut, Brazil nut and almond, butterscotch and yeasted pastry, salted caramel and tarte Tatin, candied quince and ginger, grilled pineapple, lime zest and blood orange, underscored by fennel seed, oregano, sage and thyme. The entry is rich and powerful, firm and compact, with astringent acidity providing contrast. Despite its slender mouthfeel, the wine builds considerable acid pressure, forgoes lushness and stays lean. Its finish is vertical and far-reaching, with a nutty aftertaste.
Distinctive features
Odinstal farms five hectares across four rock types and has worked biodynamically under Demeter certification since 2013; the label carries the Demeter logo. The name 350 N.N. refers to the altitude of the monopole vineyard.
