About this wine
Character
A white wine of cool clarity and a taut line. Lemon and white blossom lead, the fruit stays lean, the texture creamy without ever turning broad. This Premier Cru draws its depth from tension rather than weight.
Terroir and origin
Clos du Moulin aux Moines was founded in 962 by monks of the Abbey of Cluny and ranks among the oldest estates in Burgundy; for over six centuries the property belonged to the Cistercian Abbey of Cîteaux. The estate is located in Auxey-Duresses between Meursault and Pommard, and its cellars date back to the 11th and 15th centuries. Since 2008 Willy Roulendes has run the domaine and converted all 16 hectares to biodynamic farming: work by hand or with horses, no chemicals, no heavy machinery. The grapes for this wine come from the Premier Cru vineyard Les Folatières in Puligny-Montrachet, on the Côte de Beaune.
Grape variety and vinification
Pure Chardonnay. The white grapes ferment in small wooden casks. Ageing takes place in barriques and increasingly in casks of around 1,000 litres, with new oak now used only sparingly so that the wine's clear floral and fruity aromas are not masked by toasted notes. Depending on the appellation and vintage, the wines mature for twelve to eighteen months.
On the palate
Dry, with precise acidity as its backbone. White peach and citrus fruit carry the wine, a hint of almond adds depth, the finish is long and saline.
Food pairings
With pan-fried turbot, sole in butter, veal sweetbreads with morels or risotto with white asparagus. Also pairs well with aged Comté or Gruyère.
Highlights
A Premier Cru from an estate with a thousand-year history, farmed biodynamically and aged in cellars dating from the 11th and 15th centuries. Already approachable now, with the potential to age for several more years.
