About this wine

Character

A saline, tautly built Chardonnay that forgoes richness in favour of line. The 14.0% ABV of the 2023 vintage lends it maturity without sacrificing tension. Lemon and a chalky texture carry the wine, while the fruit stays in the background.

Terroir and origin

The "Derrière La Velle" site belongs to the village appellation and lies in the heart of Puligny-Montrachet. The limestone-rich soils of the Côte de Beaune give the Chardonnay freshness and mineral drive. Domaine Thomas-Collardot farms 2.5 hectares in the village: Jacqueline Collardot took back the family parcels in 2010, trained at the CFPPA in Beaune, and bottled her first own vintage in 2015. Her son Matthieu joined in 2018.

Grape variety and vinification

Pure Chardonnay. Gentle pressing, 24 hours of settling, then ageing in used 228-litre barrels that have already seen two to four fills. The village wines rest sixteen months on the fine lees. There is no fining, only light filtration, and the use of added sulphur is largely avoided.

On the palate

Pale golden yellow with greenish reflections. On the nose, ripe pear, white peach and lemon, followed by hazelnut, flint and a hint of elderflower. Then vibrant acidity, a creamy texture and a long, saline-mineral finish.

Food pairings

With pan-fried turbot with beurre blanc, lobster bisque or scallops with saffron risotto. Also pairs well with Bresse chicken in cream sauce and mature Comté.

Highlights

Until 1992, Pierre Thomas farmed the vines himself; after that they were leased out and the grapes sold to négociants. Only since 2015 has the family once again vinified its own wine. Annual production is around 10,000 bottles.
