About this wine

Character

Jacqueline Collardot and her son Matthieu craft a Chardonnay in Puligny-Montrachet that forgoes breadth in favour of definition. The style stays dry and saline, the fruit clearly delineated, the oak kept in the background: no buttery toast, no vanilla.

Terroir and origin

The estate covers 2.5 hectares right in the village of Puligny-Montrachet on the Côte de Beaune, on well-drained, limestone-rich soils. The vines come from Jacqueline's grandfathers, Henri Chavy and Maurice Thomas; after years under lease, she reclaimed the plots in 2010. The name "Les Climats" refers to Burgundy's precisely delineated single vineyard sites, which have been a UNESCO World Heritage site since 2015.

Grape variety and vinification

Pure Chardonnay. Gentle pressing, 24 hours of settling, then ageing in used 228-litre pièces that have seen two to four previous fills. The village wine matures for sixteen months on fine lees, is unfined and only lightly filtered; sulphur additions are also kept restrained in the cellar. 13.5% vol.

On the palate

Lemon zest and yellow pear up front, followed by white peach and hazelnut. The acidity carries the wine in a straight line, the texture feels finely grained and chalky, and the finish stays saline and dry.

Food recommendations

With turbot, scallops in butter sauce or lobster. On land, it pairs well with veal sweetbreads, poultry in cream sauce and aged Comté.

Highlights

Until 2014, the grapes were sold to négociants; only in 2015 did Jacqueline Collardot bottle her first own vintage, and Matthieu joined the estate in 2018. The estate's annual production is around 10,000 bottles.
