About this wine
Character
A chardonnay without make-up. Jacqueline Collardot and her son Matthieu draw a line in Puligny-Montrachet that aims for precision rather than breadth: saline, taut, with clear citrus fruit and a fine chalky texture. Dry, 12.5% vol.
Terroir and origin
Les Enseignères is a village-level plot in Puligny-Montrachet and forms the heart of the 2.5-hectare family estate. The vines trace back to Jacqueline Collardot's grandfathers, Henri Chavy and Maurice Thomas; Pierre Thomas farmed them until 1992, after which they were leased out. In 2010 Jacqueline Collardot reclaimed the vineyards, and in 2015 the first vintage vinified by the estate itself was bottled; before that, the grapes went to négociants. Matthieu joined in 2018.
Grape variety and vinification
Pure Chardonnay. Gentle pressing, 24 hours of settling, then sixteen months on fine lees in used 228-litre barrels that have already held two to four wines. No fining is carried out, only light filtration, and sulphur addition is largely avoided. As a result, the oak stays in the background: no clouds of vanilla, no buttery toast.
On the palate
Lemon, white peach and pear, followed by hazelnut, brioche and flint. The vivid acidity carries a creamy texture, and the finish remains long and saline.
Food pairings
Lobster with butter sauce, scallops on pea purée, oven-baked turbot or Poulet de Bresse à la crème. To finish, a mature Comté or Époisses.
Special features
The 1500 ml magnum ages more slowly than the standard bottle. The estate bottles around 10,000 bottles a year.
