About this wine
Character
A Chardonnay of cool clarity that draws its stature from acidity and minerality rather than richness. The oak stays in the background, the fruit appears taut and unembellished. In magnum, this Premier Cru ages more slowly, which suits its structure perfectly.
Terroir and origin
The wine comes from the Premier Cru vineyard Les Champs Fulliots in Monthelie, Burgundy. Domaine Rémi Jobard is based in Meursault and has been farming organically since the 1990s: synthetic fertilisers and pesticides disappeared in 1994, followed by herbicides in 1998. The vine rows are worked by hand and cover-cropped, no fertiliser is used anymore, and cordon pruning limits yields.
Grape variety and vinification
Pure Chardonnay. Grapes picked in the morning are pressed for at least six hours, those picked in the afternoon often overnight, a full twelve hours, using the gentlest possible pressure. Ageing takes around 15 months in 600-litre barrels made by master cooper Stockinger from French, Austrian and Slavonian oak; about a fifth of the barrels are renewed each year. The wine then rests in tank and is bottled unfiltered, stabilised by two winters of maturation.
On the palate
Dense and taut, carried by lively acidity. Cool citrus fruit and yellow apple, alongside delicate blossom notes and a fine smoky minerality. The oak spice remains subtle, and the wine finishes dry at 13.0% vol.
Food pairings
With pan-seared turbot, scallops in lemon butter or Bresse chicken in cream sauce. A mature Comté also complements this structure.
