Character
A Riesling of cool freshness and clear contour that thrives at just 11.0% ABV while maintaining remarkable drive. Beguiling, delicate, and crafted in a way that stimulates the appetite.
Terroir and Origin
The grapes originate from the single vineyard Steiner Schreck in Stein an der Donau, in the Krems region, where 80 to 100-year-old vines are rooted in gneiss. Markus and Heideline Lang cultivate 2.5 hectares across the Steiner Schreck and Braunsdorfer vineyards. The cellar is carved deep into the mountain's gneiss: a World War II tunnel with a constant temperature of 9 °C.
Grape Variety and Vinification
Single-varietal Riesling. Harvested based on pH value rather than sugar content, in this case at pH 2.9. Pressing takes place over several days under the open sky using a basket press with 100 tonnes of pressing force, designed by Markus Lang himself after 25 years as an aircraft engineer. Fermentation occurs spontaneously, for this wine in stoneware amphorae; aged on the full lees for two to three years.
On the Palate
Lemon, lemon balm, green apple, eucalyptus, and sage define the opening; with decanting, crushed stone, lemon oil, preserved fruits, and herbs emerge. The palate is crisp, fresh, and crystal-clear in structure, with vibrating acidity that leaves a salty trace on the tongue.
Food Pairings
Yellow courgette foam soup with ricotta gnocchi, wild-caught Skrei cod with preserved lemon, peas, and Sauce Caprice, as well as pork dim sum with a crisp honey-orange glaze. Essential to decant and serve in large Burgundy glasses.
