About this wine
Character
The Bourgogne Passetoutgrain "Les Vercherres" Sans Sulfite Ajouté 2022 is a red wine from Pinot Noir and Gamay, which Pierre-Henri Rougeot bottles without any added sulphur. Pinot Noir provides the structure, Gamay the juiciness, and 12.0 % Vol. keeps it bright and dry. The 1500 ml magnum is made for larger gatherings.
Terroir and origin
Domaine Rougeot Père & Fils is based in Meursault and farms 12.6 hectares across parcels in Meursault, Volnay and Pommard. The estate was expanded in the 1960s by grandfather Hubert, mayor of Meursault for 25 years. The cellars date back to the 18th century and were originally built for the Hospices de Beaune.
Grape variety and vinification
Passetoutgrain denotes the blend of Pinot Noir and Gamay. Fermentation is spontaneous with the estate's own yeasts, using whole clusters and without any added sulphur throughout ageing. This wine also receives none at bottling. Ageing takes place in 228-litre Burgundy barrels with a low proportion of new oak, without bâtonnage, without filtration, without fining.
On the palate
Pale cherry red with violet highlights. On the nose, cherry and raspberry, along with violet and a fine spiciness. The acidity provides the drive, the tannin stays silky, the finish is salty.
Food pairings
Charcuterie and terrines, roast poultry, duck confit or mushroom dishes. A camembert with baguette also works well.
Distinctive features
In 2016, Pierre-Henri Rougeot broke away from his father Marc's supermarket-supply business and steered the estate towards quality wines, made without sulphur and biodynamic. Work in the vineyard is done by hand, with only minimal use of tractors.
