About this wine
Character
A Pinot Noir from the Côte de Beaune, which Pierre-Henri Rougeot guides through fermentation and ageing without any addition of sulfur whatsoever. The fruit stands open and unguarded, carried by a cool spiciness and fine acidity. Nothing here is built for immediate effect: the tension comes from clarity, not weight.
Terroir and origin
The Santenots vineyard lies in the northern part of Volnay, right on the border with Meursault, on limestone-rich, iron-bearing soils. Domaine Rougeot Père & Fils farms 12.6 hectares with parcels in Meursault, Volnay and Pommard. Work is done by hand, tractors are used only minimally, and cultivation is biodynamic.
Grape variety and vinification
Pinot Noir, fermented as whole clusters without destemming, with spontaneous fermentation using the estate's own yeasts. Ageing takes place in 18th-century cellars, in 228-litre Burgundy barrels with a low proportion of new oak, without bâtonnage or any addition of sulfur. Bottled unfiltered and unfined.
On the palate
Red cherry and raspberry, alongside violet and a touch of forest floor. The texture stays silky, the tannins finely woven, the acidity keeps the wine upright. The finish is lean, saline and long.
Food pairing recommendations
Seared duck breast with cherries, saddle of venison with juniper or coq au vin with a rich, not overly spiced sauce. For cheese, Époisses and an 18-month-aged Comté pair beautifully.
Special features
In 2016, Pierre-Henri Rougeot ended the estate's supermarket business to focus on quality winemaking. His creed: "There can be no good wine from bad soil." The 1500 ml Magnum allows the wine to age more slowly.
